Introduction of chili peppers: The prevailing view is that chili peppers were introduced via Japan around the time of the Imjin War (1592) (Yi Su-gwang's Jibong Yuseol, 1614).
Changes in seasoning: Detailed kimchi recipes using red pepper powder began to appear by the publication of Jeungbo Sallim Gyeongje (1766) in the 18th century.
Improvement of napa cabbage varieties: The tightly headed napa cabbage found today became widespread in the early 20th century after efforts including the varietal improvements of Dr. Woo Jang-choon (우장춘) in the late 19th century.
2. Scientific Definition and Fermentation Mechanism
2.1 Microbiological Characteristics
Kimchi is a food produced through low-temperature anaerobic fermentation by lactic acid bacteria.

3. International Status and Standards
3.1 CODEX International Standard (2001)
Content: At the 24th session of the Codex Alimentarius Commission (CODEX) in 2001, an international standard was adopted under the name “KIMCHI.” This internationally recognized the definition of kimchi as requiring a main ingredient of napa cabbage, seasonings such as red pepper powder, garlic, and ginger, and a fermentation process.
3.2 UNESCO Intangible Cultural Heritage of Humanity (2013)
Inscribed element: The inscription covers not kimchi itself as a food, but “Kimjang, making and sharing kimchi.” It reflects recognition of kimjang as a central cultural practice that strengthens community bonds among Koreans.
4. Technical Differences from Pao Cai
Kimchi and Chinese pao cai are clearly distinguished by their production methods.
Kimchi: Salted vegetables are mixed with various seasonings and salted seafood to induce secondary fermentation.
Pao cai: This uses a brine-pickling method in which vegetables are immersed in brine or diluted vinegar to mature. Its lactic acid fermentation process differs from that of kimchi, which uses complex seasonings such as salted seafood and red pepper powder.
