Sous-vide is French for “under vacuum.” It is a cooking technique in which ingredients are placed in a heat-resistant plastic bag, vacuum-sealed after the air is removed, and then heated for an extended period in water maintained at a constant temperature. This method minimizes the loss of moisture and nutrients from the ingredients and aims to cook them evenly from edge to center.
1. Historical Background
Early concept: It was first described by Benjamin Thompson in 1799, but received little attention at the time.
Modern introduction: In the mid-1970s, French chef Georges Pralus introduced the method to reduce the loss of weight and fat in foie gras, after which it began to be used extensively in modern gastronomy.
Popularization: Since the 2000s, the rise of molecular gastronomy and the wider availability of precision temperature-control equipment (immersion circulators) have made it an essential technique in fine dining worldwide.
2. Cooking Principles
Precise temperature control: The water temperature is precisely controlled in increments of 0.1 degrees to target specific points at which glucose or proteins undergo changes.
Heat-transfer efficiency: The vacuum-sealed bag facilitates direct and efficient heat transfer between the water and the ingredients.
Osmotic pressure and flavor retention: Because the ingredients are cooked in a sealed state, their natural flavor compounds and juices cannot escape and instead condense back into the ingredients.
3. Main Advantages
Consistent results: Unlike conventional heating methods, it carries less risk of overcooking and produces a consistent degree of doneness from the edges to the center of the ingredients.
Improved texture: In particular, it breaks down the collagen in tough cuts of meat into gelatin while retaining moisture, producing a very tender texture.
Nutrient retention: There is less degradation of vitamins and other nutrients that are easily destroyed at high temperatures.

Immersion circulator: This is the core piece of equipment that maintains a constant water temperature and circulates the water.
Vacuum sealer: This device places ingredients in a bag, removes the air, and seals it.
