Ferran Adrià Acosta (페란 아드리아, born 1962) is a chef from Catalonia, Spain.
While leading the legendary restaurant el Bulli (엘 불리) [restaurant], he spread worldwide the techniques of molecular gastronomy (분자 요리) [article], which scientifically reinterpret the textures and forms of ingredients.
He is regarded as one of the most influential chefs of the 21st century and as a figure who expanded cooking into the realms of art and science.
He was born in 1962 in L’Hospitalet de Llobregat, near Barcelona, Spain.
In 1980, he first encountered kitchen work through a part-time dishwashing job at a hotel in Castelldefels. During his military service, he gained cooking experience in a naval kitchen,
and after completing a stage at elBulli (엘 불리) in 1983, he formally joined the restaurant the following year.
el Bulli (엘 불리): After joining in 1984, he became executive chef in 1987 at the age of 25, just 18 months later. Together with co-owner Juli Soler (줄리 솔레르), he elevated the restaurant to the highest ranks worldwide.
Creative closure: He introduced an unconventional operating model in which the restaurant closed for six months each year, allowing the team to focus exclusively on developing new recipes and techniques at elBulliTaller (엘불리 타예르), a laboratory in Barcelona.
elBulliFoundation (엘불리 재단): This foundation was established after the restaurant closed in 2011 to compile and share gastronomic knowledge.
"Do not copy (Creativity means not copying)": He adopted this statement by his mentor Jacques Maximin (자크 막시맹) as his lifelong philosophy, focusing on creating entirely new cooking methods instead of following existing recipes.
Deconstruction: His style seeks to separate the components of familiar dishes and alter their textures, preserving their flavors while reconstructing their forms in entirely unexpected ways.
Multisensory experience: He defines cooking not simply as something consumed through the mouth, but as a holistic experience encompassing sight, smell, touch, and intellectual play.
The main techniques developed or popularized by Ferran Adrià include the following.
Espuma: A technique that uses a nitrous oxide siphon to create sauces or dishes in the form of a light foam.
Spherification: A technique in which a liquid ingredient is enclosed in a thin membrane to form beads that burst in the mouth, with the “liquid olive” being a representative example.
Use of liquid nitrogen: Liquid nitrogen at −196°C is used to make sorbets or mousses with distinctive textures on the spot.
