The chef mentioned how the season feels like it's flying by, and I think I timed it perfectly right at the end of the ikura season. From the buri (yellowtail) that was worth it for the visuals alone, to the abalone which had such an intense aroma, and the blue crab where the sweetness of the meat was accented by the shrimp-scented crab broth and a touch of acidity. During the nigiri portion, I ate the red sea bream and immediately felt that both the shari and neta were better than ever, so I put down my camera and finished the rest with just my phone. I blurted out, "I'll take a larger portion of rice today!" and dove right into the food. It was subtle, but the difference in eating it just 5 seconds earlier was immediately noticeable in the temperature, and even the throatfish, which I’ve always found consistently delicious, had such great meat texture and fat content. The horse mackerel and mackerel, always good, felt a notch better today too, ha... Knowing kuruma ebi was in the regular course, I had the nerve to add an extra one in advance. I’m so grateful to the chef who must have read my mood and called out to the kitchen, "Two of the biggest kuruma ebi you have!" (Even the manager said they’d never seen a kuruma ebi that much larger than the chef's hand before 😮) I asked for extra nigiri of the delicious buri and mackerel, and they prepared two neta for each piece, basically an "on the house" double portion. My gosh. The only thing was that the tuna was just decent, but since this isn't a place I come to for the tuna, I’ll give it a pass in my heart. This review is far from objective, and I might adjust the rating someday, but for me, on this day, it was a 5-point meal without a doubt. With recent visits from famous figures like Fujimoto-san, Kohaku, and Chef Chiune, this place is truly becoming world-class. I’ll keep rooting for you guys infinitely. (Since it’s obvious I’m a fan, I’ve been a bit extra, sorry about that) Thanks for the meal.

It was such a beautiful evening. It was a day that made me think I really need to work harder to keep eating delicious food for a long, long time. It was also a meal where, watching the cool gentleman next to me, I thought a lot about how I should also live my days as coolly as that. Jeongdae, visited again after about a month. Based on today, I felt that I really need to come here at least once a month. I couldn't help but marvel while tasting the tsumami at Jeongdae. Started with ikura, and although ikura is common, they served salmon roe from Goseong with absolutely no fishy taste and packed with umami. For someone who loves ikura, it was a perfect start. Then the abalone. Jeongdae's abalone is truly special. It didn't look very big today. But maybe because of the aged soy sauce(?), every time I eat Jeongdae's abalone, the umami is so fantastic that it needs no salt at all. A taste I want to eat several more of :( And the flower crab that followed was, as a flower crab lover, perfect. The scent of the flower crab was condensed about 30,000 times, so scooping up the meat made me feel like I was eating a whole autumn flower crab. As someone who loves the scent of flower crab, I was even more satisfied eating just the meat. A bit of shell came out, but that's the unavoidable fate of crustaceans, right? :) The Spanish mackerel that followed was also fantastic; I think they said it was about 8kg. They smoked the huge Spanish mackerel with such artistry, it was the most delicious Spanish mackerel I've ever eaten in my life. I really don't like Spanish mackerel... but if it tastes like this, I want to eat it often from now on :) The chef is really great because he says he didn't really do anything. He says a sushi restaurant is mostly about competing with good ingredients, so he didn't do much, but he is unbelievably humble, and that's just not true. He truly brings out the flavor with such artistry. The common octopus was delicious, and the following hairtail with pine mushrooms were also delicious. Hairtail and pine mushrooms are ingredients you easily get tired of, but they seem really different when served as Jeongdae tsumami. Along with the seasoning that is matched so artistically, the degree of doneness that maintains the moistness is art. Then the sushi followed, and I personally thought Jeongdae's shari had seasoning that was a bit weak, but maybe I got drunk early in the past, because today I could really feel the seasoning of the shari in every piece. Whether the seasoning is weak or strong, I like it all, but the sushi was truly delicious with just the right amount of seasoning. When shaping the sushi, he used very concise force and then held it lightly afterwards, so maybe that's why, occasionally, the sushi looked a little loose, but the feeling of it falling apart in the mouth was truly great. It's not a style of squeezing the shari too tightly, so I think the harmony with the neta works well. I don't have much excitement for tuna, but the akami was especially so delicious. I'll have to bring my companion who doesn't like sushi but loves akami. Every single piece of sushi was so delicious, and since the long-awaited Jeongdae giant clam is so precious, I asked to add it for an extra fee as they said 2 pieces could be added. Even if I go bankrupt tomorrow, I have to eat Jeongdae's giant clam before I go bankrupt. The persimmon that came out for the finish was also a perfectly sweet ending. It was a grateful meal. Sometimes, saying it was a grateful meal while paying for it myself feels funny and embarrassing, but it was that delicious and I was happy. If I was happy myself, that's enough... right? A place I want to work harder and visit often. Jeongdae is the best.
