It doesn't even have any chain locations, but if you search for 'Jeil Makchang,' tons of very similar-looking places pop up. It opens at 5, but they say if you show up at 5, you're guaranteed to wait. So I went at 4:30 lol - Pork makchang, beef makchang, soybean paste stew. Great restaurants make you think they're good even before you put in the effort to find the flavor! This place's makchang was the same. As soon as I took a bite, Oh, this is good. There's almost no smell, is there? I thought that automatically. It smells a bit funky when it's served, but once you grill it over the charcoal while rolling it around, that signature odor is barely noticeable. Even less so the crispier you grill it. The special sauce is on the salty side. Adding a bunch of Cheongyang chili peppers might change that, but with the amount served by default, the saltiness stands out more than the spice. Surprisingly, the hidden MVP is the soybean paste stew; even with its light price tag of just 2,000 won, it's quite hearty and substantial. The stew is also on the salty side, so if you don't eat it with rice, you probably won't get half the satisfaction it provides. A cost-effective soybean paste stew that tastes great and even comes with two chunks of chubby potato. If there's a downside that might divide opinions, it's that it's really inconvenient to eat. I'm not sure if you'd call it a characteristic of charcoal... but the heat intensity changes depending on how much charcoal there is, so some spots burn way too fast and others too slow; you have to keep rolling the makchang around without a single second to put the tongs down. It was enough to make my anterior deltoids burn! Personally, I didn't like it. Haha Still, if you're a fan of makchang, it's a good place to visit as a sort of culinary challenge.
