And a spicy, deep, and rich broth. It had been a while since I enjoyed such a well-balanced bowl of ramen. There are actually quite a few ramen shops in Jinhae, but I personally think this one deserves a spot near the top. After reading the post about Ramen Bar Shikou by Mojarang yesterday, I was suddenly craving ramen, so I visited Menya Sakura, which I had bookmarked, as it fit my route. First off, the owner was incredibly friendly the moment I walked in. It was a pleasant start even before the meal. I ordered the Shoyu Ramen and Chicken Karaage. The Shoyu Ramen looks quite appetizing from the start. Large pieces of chashu generously fill the bowl, topped with bean sprouts, garlic flakes, and a soft-boiled egg. The noodles are thicker than I expected, but they weren't mushy and were cooked just right, which I personally loved. And what I liked the most was definitely the soup. It looks quite thick and heavy, but when you take a sip, it's not as salty as you might think. Instead, the deep flavor and umami of the broth really shine through. With a slight spicy kick, it’s not greasy at all, making me want to keep drinking it. Rather than sticking strictly to the salty profile typical of Japanese ramen, it felt like the balance was well-adjusted to suit the Korean palate. The chashu was also very good. Even though it was sliced into large pieces, it wasn't tough and was quite tender, and enjoying it with the crunch of the bean sprouts and the savory garlic flakes, the texture and flavor changed with every bite, so it never got boring. The chicken karaage I ordered on the side was impressively large. They serve about six large pieces, each roughly half the size of a fist, so with the ramen, the portion was quite huge, and I couldn't finish it all. Overall, this is a ramen shop where the balance between the noodles, soup, chashu, and toppings, rather than any one part being overwhelming, is excellent. If someone asks for a ramen recommendation in Jinhae, I would definitely recommend this place. I plan to try the dry ramen next time. Given how good the Shoyu Ramen was, I'm quite curious about that too.
