It's rare to find a bar that specializes in Baijiu, and it's even more surprising to find one in Guwol-dong, Incheon. Their signature dishes are Dongpo pork and steamed fish, but since quantities are limited, it is best to make a reservation in advance. Dongpo Pork The softness and springiness are definitely well-preserved. It is certainly a Dongpo pork that melts in your mouth, but it's slightly lacking in the moistness of the lean meat. Steamed Fish This dish features steamed marbled eel coated in starch and served with a sauce. Ah, the texture is so springy that the Baijiu goes down smoothly. It's almost a shame that it disappears so quickly in your mouth. Fish-Flavored Fried Eggplant When you dip the crispy-on-the-outside, soft-on-the-inside eggplant into plenty of fish-flavored sauce, need I say more? Though not pictured, the fried rice was also good, and the Doubanjiang cucumber salad ordered as a palate cleanser was refreshing. Overall, the harmony between the satisfying food and the appropriate Baijiu was excellent... I also liked that they have created several Baijiu tasting courses based on flavor profiles. Since menu items are limited and there are few tables, reservations are a must if you want to visit during dinner hours.
