Personally, I thought I hadn't found any beef soup that could match Daegu Sikdang (대구식당) in Haman, but Halmae Gukbap (할매국밥) in Gyeonghwa Market, Jinhae, wasn't an easy pushover either. They have been serving beef soup at Gyeonghwa Market for a long time, and this place is especially famous for its soup with sugure. Sugure is said to be the collagenous part between the skin and meat of a cow, and its chewy texture is definitely attractive. Before the gukbap comes out, two side dishes, cubed radish kimchi and napa cabbage kimchi, are set on the table first. Both went well with the soup, but personally, the napa cabbage kimchi suited me a bit better. And finally, the beef soup. When I first saw the broth, it looked clearer than I expected, so I wondered if it might be a bit bland or light. But after one bite, it was completely different from my expectation. Unlike its clear appearance, the broth has a quite deep and rich flavor. It doesn't feel oily or heavy, but it's fascinating how the unique rich umami of beef is fully alive. First, I try the bean sprouts in the broth. They aren't too tough and have a nice, soft bite, so they were good to eat along with the soup. Next are the sugure and the meat. The unique chewy texture of the sugure is clearly present, and as I eat the meat in between, the texture keeps changing, so I don't get tired of it. Once I've finished most of the solids and there's a lot of broth left, I dump a bowl of rice right into it. Scooping up the remaining bean sprouts and rice together with a piece of napa cabbage kimchi on top is perfection. After finishing a hot pot like this, I feel quite satisfied. I really feel like I had a proper meal at Gyeonghwa Market. Whenever I crave beef soup, I think I'll be coming back here again.
