It’s not something you can find just anywhere, so I was always curious. I made a reservation at Cheongsong Garden (청송가든) to try both the chicken sashimi and the grilled chicken. When you book, the owner asks what time you’ll arrive. They prepare the chicken right before you get there, so the sashimi is served immediately upon arrival. Everything except the parts used for sashimi is prepped for grilling, which is a fun way to enjoy a whole chicken in different styles. I started with the chicken sashimi, which I was most curious about. It’s made up of breast, gizzards, and neck meat. It was much less daunting than I’d imagined. Since it’s raw chicken, I expected a fishy smell or a strong odor, but the texture was far more memorable than any scent. Dip it lightly in the sesame oil sauce. The breast meat is crunchy with a slightly chewy finish; it’s completely different from the cooked chicken breast we know. If you closed your eyes, you might even mistake it for raw fish at first bite; it’s that clean. My personal favorite was the chicken gizzard sashimi. It’s much more elastic and crunchy than the grilled gizzards I’m used to. The more you chew, the more a subtle, nutty flavor comes out. It was the part that best delivered the unique experience I was looking for in chicken sashimi. After finishing the sashimi, the grilled chicken begins. They grill the prepared chicken for you. The texture is definitely different from the rotisserie or common grilled chicken I’m used to. the texture is incredibly soft and moist. The outside gets a nice nutty aroma from the heat, and the inside meat is tender, falling apart easily without being dry. Personally, chicken can sometimes start to feel monotonous, but here, each part had a slightly different texture, so I didn't get that feeling. The side dishes were also quite impressive. They serve a variety of Jeolla-style side dishes, and the most memorable one was the gat-kimchi (mustard leaf kimchi). If you take a piece of well-grilled chicken and top it with the gat-kimchi, the pungent and tangy taste of the kimchi adds to the nutty flavor of the chicken. Pairing this with a glass of makgeolli was a great match. They finish with chicken porridge, which was spicier than it looked, and quite delicious. I visited out of curiosity because chicken sashimi is rare, but the entire meal—from the sashimi to the grilled chicken and the side dishes—was quite fun. If you’ve ever been curious about what chicken sashimi tastes like, Cheongsong Garden is a place that will give you a truly memorable experience.
