Since they specialize in mazesoba, I've been quite curious about this spot for a while. Actually, my original destination that day was ‘Toridoshi (토리도시)’. I went out of my way to have their shoyu ramen, but even though it said open on Naver Place, it was closed when I arrived. With a sense of disappointment, I pivoted to the nearby Takusoba. I ordered their signature: the pork rind mazesoba. I added a slice of chashu on the side. As soon as I received the food, my first thought was, ‘I didn't know mazesoba could be plated this beautifully.’ Pinkish chashu wraps around the edge of the bowl, and the pork rinds are arranged neatly in the center as if they were in line. They don't just drop the egg yolk on top; it's served separately on a spoon, showing how much care they put into the overall presentation. First, I popped the yolk and mixed the noodles, toppings, and sauce thoroughly. Taking a bite, a rich meat aroma and umami hit me immediately. It feels like a flavor profile that stands at the polar opposite of the gyokai-style mazemen I’ve had before, which relies heavily on strong seafood notes. Instead of fish or seafood flavors, this mazesoba focuses on the deep, heavy umami from the meat. The chewy texture of the pork rind adds a lot of fun to every bite. When the thick, tacky texture typical of mazesoba starts to get a bit much, a sip of refreshing zero-coke is a perfect pairing. About halfway through, I drizzled in about two rounds of kombu vinegar. As the vinegar entered, the heavy taste lightened up and the added acidity kept me from getting tired of the flavor until the very last bite. And it doesn't end there. Once you’ve finished almost all the noodles, if you ask for ‘rice and soup, please,’ they bring them out separately. Mixing the rice into the remaining mazesoba sauce creates a different experience compared to eating it with noodles. It's a great way to clean up all the rich sauce left in the bowl, so I personally highly recommend doing this. Rather than being flashily provocative, it was a mazesoba with solid foundations and a clear sense of direction in what they wanted to showcase. Rich meat aroma, chewy noodles, tender pork rind. A place worth visiting at least once when you’re craving mazesoba in Changwon. Takusoba was pretty good.
