I can't help but wish the lemon ramen I had at Sarukame (사루카메) had expressed the citrus notes of yuzu or lemon with this level of intensity. The yuzu shio ramen had a subtle yuzu citrus scent, and the saltiness of the shio tare really brought out the umami of the broth. Since I haven't tried the yuzu shio ramen at Damtaek (담택) yet, and it's been a long time since I've had yuzu shio ramen, it’s a soup I’ve been really craving. The tsukemen was a yuzu tsukemen, featuring a shoyu-based tsukejiru with a strong yuzu fragrance and sweetness. Even though it was quite sweet, it was more of a fruity sweetness rather than sugary, which blended with the shoyu to create a unique and distinctive flavor profile. It was a really good ramen with a subtle tartness, a touch of sweetness, and the saltiness of the shoyu appearing throughout. To finish, I had the house-made yuzu cheese. It's a slightly dense cheese where the yuzu fragrance comes through clearly against the nutty flavor. I wish they sold this separately.

Paranko Ramen (tonkotsu) was a Fukuoka-style tonkotsu that reminded me of the tonkotsu ramen at Kyo Ramen. I used to visit often back when there weren't many good ramen places in Busan; it had a rich pork bone broth with a high salinity level that hit you right away with a strong tonkotsu flavor. What goes with delicious broth? Rice. After finishing with a bowl of rice mixed into the soup, you wait and get some house-made yuzu cheese, which you can enjoy as a finish before leaving.
