I've seen a Slim Jim + Idro before, but a Mirage + Idro setup is a first. Saw a Kees van der Westen tamper and thought it was odd, but was very surprised. E80 grinder, plus a Mythos and an EK43 grinder. Even saw a Navigator scale, so their sincerity really comes through. Served on a tray in a Japanese Kinto glass with sparkling water and espresso in an Origami demitasse. They provide organic La Perruche sugar from France, so 5,000 won is just right. Dreamy ambient playlists flowing from Beosound speakers and service that was kindness on top of kindness was the best. Espresso with no burnt taste, just the right amount of smokiness, and a clean cup with a crisp finish. The Snickerdoodle-like cookie from the US wasn't hard; it had a soft texture with crunchy sugar and fragrant cinnamon. The overcook variation between top and bottom and the perforated mat pattern on the bottom were fun to see. Brewing coffee made with a Paragon stand, Vector metal dripper, and Brewista pot allows you to smell the beans first, which is great for choosing.
