If you walk through downtown Jorye-dong in Suncheon, there is a street lined with sashimi restaurants, and Orosi (오로시) stood out among them. I visited late, but there were so many customers that there was still a wait until nearly midnight. Looking at the menu, it wasn't just a place that served common fish; it gave the impression of a place that really cares about the quality of the ingredients, offering high-end varieties and things like kuruma shrimp. Once you're seated and order, basic side dishes like pajeon (green onion pancake), miyeok-guk (seaweed soup), and a rockfish dish arrive first. Overall, the flavors of the side dishes were quite good. Usually, at sashimi places, I focus on the fish and don't expect much from the sides, but here I even asked for refills on a few of them. What I wanted to try most that day was the horse mackerel sashimi. Since they happened to have it, I ordered it right away, and the presentation was excellent as soon as it came out. I was specifically instructed not to squeeze the lemon directly onto the fish, but to squeeze it into the soy sauce and then dip the mackerel. They also serve it with rice, onions, and dried seaweed, which makes the way you eat it quite fun. Eating just the mackerel with the soy sauce is good, but if you put a piece of fish on some rice with onion and wrap it in seaweed, you can eat it almost like sushi. Personally, I really loved this combination. Horse mackerel is an oily fish, so if the condition isn't perfect, it can quickly get a fishy smell, but here there was almost none of that. The flesh was tender and the savory flavor was vibrant, and the bite of the onion combined with the rice neatly balances out the mackerel's signature oiliness. Even in omakase courses, if the horse mackerel isn't in good condition, you can have a lingering fishy scent after just one bite, but the one I had at Orosi that day was clearly fresh. In the end, I didn't leave a single piece behind. I finished off with a jiri (clear fish soup). You can choose between spicy fish stew and jiri, but since I wanted something clear that day, I ordered the jiri. After eating plenty of sashimi, finishing with a warm and mild soup kept the meal on a great flow. Overall, I got the impression that this place has high-quality ingredients. The turnover is quite fast, with customers arriving until late at night, so it seems the freshness of the ingredients is consistently maintained. A place I want to visit again when I want to properly enjoy rare fish species in a clean atmosphere. The horse mackerel sashimi I had that day was visually stunning, but above all, it was impressive for its freshness and vibrant savory flavor without any fishy taste.
