They sell soy sauce pork belly, which is famous in Cheongju, Chungcheong-do, so I ordered the signature sauce pork belly. When you order, they bring an earthenware pot and a container of sauce. You pour the soy sauce into the pot, dip the pork belly in it, and then grill it. I visited yesterday and it seems they now pre-fill the pot with soy sauce and green onions from the start. Since it is frozen pork belly grilled directly over charcoal rather than on foil or a grill pan, it definitely loses a lot of moisture. It shrinks quite a bit and burns easily, so you need to flip it often. Because I dipped it in sauce first, the meat was moist, so it required a bit more cooking time. Sometimes, when it felt like bulgogi from a stir-fried meat restaurant, the center was still undercooked. However, if you grill it well, it's delicious with a slight sweet and salty flavor. If you prefer, you can eat it as regular frozen pork belly without the sauce. Many people love the classic frozen pork belly seasoned with just salt and pepper, but this is a different style. If you ever get tired of standard frozen pork belly, this is a great place to try.
