So, when I heard that Menyajuka (멘야주카), Sakana Ramen's second brand, had opened, I naturally decided to visit. While Sakana Ramen is a place that bases its broth on fish, Menyajuka takes a completely different direction. This spot focuses on meat, offering a much richer and heavier flavor profile. I ordered the Juka Black, mapo tofu, and fried meat. The Juka Black arrived first. Its appearance was definitely different from any ramen I've had before. Topped with shredded meat, green onion, menma, and garlic stems, it makes quite a strong impression overall. Starting with a sip of the broth. A rich chicken broth with a significant level of salinity hits you first. It’s not on the light and clean side; rather, it fully commits to density and seasoning. The noodles aren't soft or overcooked either, but retain a firm, chewy texture that pairs well with the intense flavor of the broth. The overall balance was good. However, the saltiness is quite high, so it might feel a bit challenging for those who usually prefer mild ramen or are trying it for the first time. Conversely, if you enjoy rich broths and strong seasoning, you’ll likely find it quite satisfying. After finishing most of the ramen, I added a bowl of rice and the mapo tofu. The mapo tofu contains finely minced meat and soft tofu, and a subtly spicy aroma rises even before you take a bite. I put the mapo tofu on the rice, mixed it, and took a bite; even though I was already quite full from the ramen, it strangely kept going down. It offers a heavy, stimulating flavor in a way that’s different from the ramen, feeling more like an independent main dish rather than a side menu. I finished with a sip of oolong tea. After eating such oily and rich foods one after another, the clean taste of the oolong tea felt great for refreshing the palate. If Sakana Ramen showed a clear identity with its fish broth, Menyajuka is a place that shows a different direction by centering on meat. It’s interesting how the two brands have such clearly distinct styles. I’ve only visited once, but I’m looking forward to seeing what other menus and styles they’ll introduce in the future.
