The kimchi-jjim retains the crunchy texture of the aged kimchi, and the sourness is so intense that it's a style with a clear divide in preference. I applaud them for expressing that sharp, sour kick as is, without trying to appeal to the masses. This is how kimchi-jjim should be. The meat is generous, has no gamey smell, and the broth is spicy. Pair it with the seaweed that comes as a side dish, and it's a real rice thief. Most people seem to order the rolled omelet too, so I tried it—it's soft and salty, and delicious once you add the ketchup provided to your liking. Placing a piece on rice with some aged kimchi and dipping it in the broth, now that's a perfect combination. Delivery kimchi-jjim can be tasty too, but most are too sweet and taste similar, so a kimchi-jjim this packed with sourness isn't something you come across easily. If you like kimchi-jjim, it's definitely worth a try, even if it might not be for everyone.
