There’s always a wait on weekends, and it’s likely the most famous spot for mulgalbi in Jeonju. I ordered Homemade Mulgalbi (mild) Rice bowl Chives fried rice (rice stir-fried in the remaining broth) The portion isn’t that large for the price. You have to cut the ribs as it boils and keep stirring so it doesn’t burn on the bottom. Don’t boil the ribs too long or they get tough, so eat them as soon as they’re cooked. Jeonju food usually has a strong umami kick, but the broth here lacks it even after reducing it. It’s not that the broth lacks saltiness or sweetness, but the flavor feels hollow, making it taste bland overall. Since it’s pork ribs, it’s more lean meat than fat, and the texture is firm but slightly gamey. Well, it’s just pork boiled in water, so that’s expected. I’ve felt this smell at several other mulgalbi shops too, so it’s not unusual. If the seasoning were stronger, it would mask it well and taste good, but here the lack of umami in the broth actually makes the pork smell more prominent. To finish, you stir-fry the chives fried rice with the remaining broth. Even though I thought I left enough broth, it was still a bit bland. I probably should have left even more than I did for it to be decent. It’s not cheap for the wait, and I’m not satisfied with the taste. Since there are other places that serve better and cheaper mulgalbi, I don’t think I’ll visit again.
