I remember our staff from Mexico watching the Mexican Independence Day broadcast, with their hands over their hearts as they sang. Since cacao is a crop deeply connected to colonial history, I wonder if mole, which uses cacao, was prepared as a special menu item for that reason. This is an authentic Mexican spot that serves four types of salsa, and you can feel their confidence in their cuisine. Although there was a difference between the spice labels and the actual heat, it was fresh and delicious. The service felt a bit hectic, but it also seemed to add to the vibe of the Mexican restaurant. The quesadilla was even better than expected. The meaty aroma and smokiness were excellent, with just the right amount of delicious cheese, and the fluffy potatoes that absorbed the meat flavors are amazing when topped with various sauces. The grand finale, the mole sauce, had a great depth of flavor from the cacao and spices, and it went well with the perfectly cooked chicken leg and the rice with its unique texture, making for a lovely meal. However, it felt a bit salty for my taste. The tortillas had a fluffy, sponge-like texture, but personally, I preferred the rice. *Mole is a special menu item for Independence Day and is not usually on the menu.
