Those kinds of soups have a dense consistency, making them feel heavy and sometimes even a bit chalky. But you can easily think of Yangsan Dwaeji Gukbap at Yangsan Nambu Market as the exact opposite style. The broth is clean and light. That doesn't mean it lacks flavor or tastes watered down. It still has that savory taste unique to gukbap, but the finish isn't heavy at all, making it the perfect style for a hangover meal the day after drinking. I ordered the mixed gukbap this time. As I ate the meat and offal with the soup, the non-aggressive broth kept me reaching for the spoon without feeling overwhelmed. And something that surprisingly stood out at this place was the kkakdugi (cubed radish kimchi). Kimchi is important for any gukbap place, and the kkakdugi was refreshing and perfectly seasoned, going so well with the soup. In the end, I finished all the kkakdugi and even poured the remaining radish juice into the soup to eat with the rice. It was a bit different from my usual preference for thick and rich gukbap, but that actually made its character even clearer. If you call it a 'hangover-style gukbap', it fits perfectly. If you like clean and light gukbap, you'll probably be quite satisfied.
