Since it appeared on Chef Sung-jae Ahn's YouTube channel, 'God of Cooking', there might be a wait.. It is one of my top two favorite pork belly restaurants in Seoul haha It's not very accessible by public transport so I can't visit often, but I really want to come here frequently. (The owner is so kind) They are open until 2 AM, which is great for a late meal^__^ Except for the hidden menu, soybean paste stew, and fried egg, side dishes are all self-service. You must get lots of green onions!! The menu only features pork belly, but by grilling it with kimchi, bean sprouts, seasoned green onions, radish salad, and garlic, you don't even envy other menus haha Especially when you pair grilled seasoned green onions with the meat, it's truly 'delightful' (mimai)... I was eating without much thought, and I don't know how many times I just said, 'Wow...' lol (I think there was a salty fermented fish flavor) The owner said they make everything themselves except for the kimchi, and there is a changing daily 'hidden menu' (today it was radish kimchi), which is fun and delicious. What was unique was that when adding kimchi, the owner told me to pour plenty of kimchi juice? There was even a separate ladle for it. When I asked why, they said it was to prevent the kimchi from burning. I usually like to grill my kimchi until it's crispy, but since pork belly has so much fat, Hongbyeolgam-ne's way of 'stir-fry' grilling seems to suit the pork belly better. It seems always best to follow the owner's recommendations haha There are many types of alcohol, but plain soju or somaek (soju:beer=1:1 or 2) seem the best. When you need to eat a lot of meat, soju is the best because it doesn't make you feel too full lol And the most excellent part of Hongbyeolgam-ne's drink list is, the fact that they have Zero Coke, specifically Coca-Cola Zero. Honestly, I was debating between 3.5 and 4 stars, but they gave me a Zero Coke for free, so I gave it a 3.5... -_-
