First off, the quality was exceptionally high. Being able to choose from several breeds of pork is a huge advantage, especially because it gives regular diners a chance to taste and understand the differences. I ordered the Berkshire K and Beodeul pork. The Berkshire was a bit firm, while the Beodeul pork was tender. As expected, the loin and pork jowl were on the fattier side, while the tenderloin was lean but incredibly tender. That said, I personally couldn't detect any pork aroma at all(?), which almost made it feel a little too perfect and impersonal. The texture, juiciness, crispness, and moisture were all there, but personally, I would've liked a little more of that pork aroma.

After waiting about 1 hour, I ordered the Joseon black pork tenderloin. I wanted to try something else, but everything was sold out, so I had no choice. Still, I get the feeling anything you order here would be impressive. You can tell just by looking at the color of the meat, but it is supremely tender. When you take a bite, each individual strand of meat is visible like a skein of thread. The breading is also just the right thickness with the right amount of breadcrumbs, stimulating all five senses. Not only is the food excellent, but so is the philosophy behind it. As Gyokaizen (교카이젠), a “boundary line” that aims to introduce delicious pork from every corner of the country, it fulfills that role perfectly. In that sense, I want to try every item Gyokaizen serves.
