The flavor hits you immediately from the first bite, and the pronounced sesame oil aroma and sweet seasoning clearly set it apart from the other places. I usually pair yukhoe with soju, but Jamaejip's version seems like it would go better with beer instead. It's not pictured, but Jamaejip's yukhoe bibimbap comes with aged kimchi. The yukhoe itself is sweet, but interestingly, the yukhoe bibimbap is fairly light. The crunch and acidity of the aged kimchi, the aroma of perilla oil, and the sweetness of the yukhoe come through one after another, giving it a much wider range of flavors than other places. Of all the yukhoe bibimbap I've tried at Gwangjang Market, Jamaejip's is probably my favorite. The sweet yukhoe is plenty good on its own, but at Jamaejip, I'd recommend ordering the yukhoe bibimbap along with it rather than just having the yukhoe.

The rice came topped with yukhoe, aged kimchi, perilla leaves, and seasoned seaweed, and I simply mixed everything together. The nutty aroma of the perilla oil blended with the tart aged kimchi, and with the yukhoe added, it was surprisingly well seasoned even without anything else! As I kept eating, the perilla leaf aroma came through, giving the whole dish a pleasantly fresh quality. My one minor disappointment was the seasoned seaweed. Since the bibimbap didn't have a separate sauce, its salty, seasoned flavor seemed to stand out a little too much here and there, haha With just a little less seaweed, I think the flavors of the aged kimchi, perilla oil, and yukhoe would have come through more clearly! Still, it was distinctly different from gochujang yukhoe bibimbap, and I had a fun, delicious meal :)
