Noma × Wildduck Canteen (와일드덕칸틴)
I went to Wildduck Canteen after hearing that chefs from Noma would be running a one-day pop-up. This was my first experience with Nordic cuisine, so I went in equal parts excited and curious. Since I didn’t know when I’d get another chance to experience Noma’s style, I ordered and tried everything on the menu. The first dish to arrive was the most memorable thing I ate that day. The beef tartare in particular felt remarkably fresh and original. It came with a variety of vegetables, each with a fairly distinctive aroma on its own, yet they were surprisingly harmonious when eaten together. The plate made me think, “They really do approach vegetables and herbs differently.” Next came the omelet. At first, I thought the greens on top were cilantro, but they actually had an aroma reminiscent of chamnamul. The chicken liver pâté had less presence than I expected, which was a little disappointing, but I was happy with the overall seasoning and the quality of the sauce. The first bite of the tsukune that followed was the most striking. A new flavor that felt familiar yet was difficult to describe appeared for a moment, after which it naturally settled into simply being a delicious tsukune. The carnitas were interesting too. They were topped with plenty of cilantro, with a base underneath that looked like a tortilla but had a different texture. It was hard to cut with a knife, but in the mouth it was slightly chewy and pleasantly springy, which made it fun to eat. The seasoning was right, and the overall balance was good. The crudités that followed were the most challenging dish of the day. The menu description mentioned oysters, so I wondered where they had been used; it turned out the sauce in the center was oyster-based. Since I don’t usually care for oysters, this was personally the most difficult plate, though it did have an interesting aspect. Some of the vegetables helped suppress or soften the oyster’s distinctive aroma, creating a more harmonious flavor than I’d expected. Still, while eating it, I found myself thinking, “If this represents one side of Nordic cuisine, I may need to think a little more before diving into it seriously.” The final dessert was flan. The server specifically told us to pay attention to the aroma, so I first tasted the caramel sauce on its own. It began with the familiar sweetness of caramel, then finished with a distinctive aroma that was difficult to describe. Unfamiliar, but interesting.
