My all-time favorite ciabatta
Mongsim (몽심) is a bakery that took first place at the Daejeon Bread Festival's Bread Awards in 2022 and 2024. It's known for baked treats like madeleines and financiers. Madeleines Their cute, plump shape is matched by a soft texture. They're sweet, with the main ingredients' flavors coming through strongly. Financiers They're intensely buttery, with a crisp exterior and a chewy bite. The rich flavor of the main ingredients was delicious, but with so much butter, they were also a little heavy. Tomato basil ciabatta The outside is crisp, while the inside is chewy and moist. With each bite, the fragrant basil and the tomato's sweet-and-tangy flavor come together beautifully. Mongsim is so popular that on weekends, people join the waitlist and wait more than two hours. Many breads sell out after 3 p.m., so it's best to visit early. The shop isn't large, so only two groups can enter at a time. Even when your number is called, you have to line up outside and wait a little longer. Also, rather than picking up the bread yourself, you tell the staff the names of the breads you want, and they'll get them for you. I often see people looking confused because they have to wait again after their number is called, or feeling awkward after picking up bread themselves and then being told how the system works. I can't help but feel for them. For first-time visitors, I think information explaining how to enter and purchase would make the experience much easier :) Bread often leaves my stomach feeling uncomfortable, but I love Mongsim's ciabatta because it's light and easy on the stomach. The wait is unavoidable, but I keep coming back for the delicious table bread. It's a bakery I truly love ✨️
